Instructions

  1. 1. Make the Raspberry Chocolate Ganache: In a heat proof bowl set over a simmering pot of water (double boiler), or in the microwave in 30-second intervals, melt the white chocolate, stirring frequently until smooth. Be careful not to burn the chocolate!
  2. 2. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Pour the hot cream over the melted white chocolate. Let it sit for a minute to soften the chocolate.
  3. 3. Add the raspberry puree, softened butter, and salt to the chocolate mixture. Whisk until everything is fully combined and smooth. The mixture should be thick and glossy. If not, re-melt the chocolate by microwaving in 15 second intervals until the chocolate is melted.
  4. 4. Chill the Ganache: Cover the bowl with plastic wrap, pressing it directly onto the surface of the ganache to prevent a skin from forming. Refrigerate for at least 2 hours, or preferably overnight, until firm enough to roll.
  5. 5. Shape the Truffles: Once the ganache is firm, use a small cookie scoop or spoon to scoop out portions of the mixture. Roll each portion between your palms to form a smooth ball. Place the rolled truffles on a parchment lined baking sheet.
  6. 6. Prepare the Chocolate Coating: Place the chopped semisweet or dark chocolate and coconut oil in a heat proof bowl. Melt over a double boiler or in the microwave in 30 second intervals, stirring until smooth.
