  • 1 cup fresh or frozen raspberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the Raspberry Filling: In a small saucepan, combine the raspberries, sugar, cornstarch, and lemon juice (if using). Cook over medium heat, stirring constantly, until the raspberries break down and the mixture thickens into a jam like consistency. 5-7 minutes. Remove from heat and let cool completely.
  2. Make the Cookie Dough: In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. Chill the Dough: Divide the dough in half, flatten each half into a disc, wrap tightly in plastic wrap, and refrigerate for at least 30 minutes to prevent spreading.
  6. Roll and Cut the Cookies: Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
  7. On a lightly floured surface, roll out one disc of dough to about 1/4 inch thickness. Use cookie cutters to cut out desired shapes.
  8. Assemble the Cookies: Place half of the cut out cookies on the prepared baking sheets. Spoon a small amount of the cooled raspberry filling onto the center of each cookie. Top with the remaining cut out cookies. Gently press the edges to seal.
  9. Bake the Cookies: Bake for 8 10 minutes, or until the edges are lightly golden brown.
