Description
A quick and easy shrimp scampi recipe with garlic, lemon, and white wine sauce, perfect for a delicious weeknight dinner.

- 1 pound large shrimp, peeled and deveined
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1/4 cup dry white wine (or chicken broth)
- 1/4 cup lemon juice, freshly squeezed
- 2 tablespoons olive oil
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 1 pound linguine or your favorite pasta
Instructions
- Cook the pasta according to package directions. Reserve about 1/2 cup of the pasta water before draining.
- While the pasta is cooking, pat the shrimp dry with paper towels and season with salt and pepper.
- In a large skillet, melt the butter with the olive oil over medium heat. Add the minced garlic and red pepper flakes (if using) and cook for about 30 seconds, or until fragrant.
- Add the shrimp to the skillet in a single layer. Cook for 2-3 minutes per side, or until pink and opaque.
- Pour in the white wine (or chicken broth) and lemon juice. Let it simmer for 1 minute, scraping up any browned bits from the bottom of the pan.
- Stir in the cooked pasta and parsley. If the sauce is too thick, add a little bit of the reserved pasta water to reach your desired consistency.
- Toss everything together until the pasta is well coated with the sauce.
- Serve immediately and top with extra parsley!
