- For the Crumble Topping:
- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- ¾ cup cold unsalted butter, cut into small cubes
- ½ teaspoon baking powder
- ¼ teaspoon salt
- For the Cherry Filling:
- 4 cups fresh or frozen pitted sweet cherries
- ¼ cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- ½ teaspoon almond extract (optional)
Instructions
- 1. Preheat your oven to 375°F (190°C). Grease and flour a 9×13 inch baking pan.
- 2. In a large bowl, combine the flour, sugar, baking powder, and salt for the crumble topping.
- 3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
- 4. In a separate bowl, prepare the cherry filling. Combine the cherries, sugar, cornstarch, lemon juice, and almond extract (if using).
- 5. Press half of the crumble mixture into the prepared baking pan to form the crust.
- 6. Spread the cherry filling evenly over the crust.
- 7. Sprinkle the remaining crumble mixture over the cherry filling.
- 8. Bake for 30 to 35 minutes, or until the topping is golden brown and the cherry filling is bubbly.
- 9. Let cool completely in the pan before cutting into bars. This allows the filling to set and prevents a gooey mess.
