  • Total Time: 3 hours
  • Yield: 12 servings 1x

Description

A moist and delicate Pistachio Rose Milk Cake with a fragrant rose milk soak and a light rose whipped cream topping. Perfect for special occasions or a cozy afternoon treat.

Ingredients

Scale
  • 1 ½ cups all purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • ¾ cup milk
  • ½ cup finely ground pistachios
  • 1 (12 ounce) can evaporated milk
  • 1 (14 ounce) can sweetened condensed milk
  • 1 cup heavy cream
  • 1 tablespoon rose water (adjust to taste)
  • 2 cups heavy cream
  • ¼ cup powdered sugar
  • ½ teaspoon rose water (adjust to taste)
  • Pistachios, chopped for garnish
  • Dried rose petals (optional), for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla and almond extracts.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Gently fold in the ground pistachios.
  7. Pour batter into the prepared pan and bake for 25 to 30 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Let the cake cool in the pan for 15 minutes before poking holes all over the top with a fork or skewer.
  9. In a large bowl, whisk together the evaporated milk, sweetened condensed milk, heavy cream, and rose water.
  10. Slowly pour the milk mixture evenly over the cooled cake, allowing it to soak in.
  11. Cover the cake and refrigerate for at least 2 hours, or preferably overnight, to allow the cake to fully absorb the milk mixture.
  12. In a large bowl, whip together the heavy cream, powdered sugar, and rose water until stiff peaks form.
  13. Spread the rose whipped cream evenly over the soaked cake. Garnish with chopped pistachios and dried rose petals, if desired.
