Soft and chewy pistachio pudding cookies that are easy to make and perfect for St. Patrick’s Day or any day you want a green treat!

- 1 cup (2 sticks) unsalted butter, softened
- ¾ cup granulated sugar
- ¾ cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 (3.4 ounce) package instant pistachio pudding mix
- 2 ¼ cups all purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- Chopped pistachios for garnish (optional)
- Powdered sugar for dusting (optional)
Instructions
- 1. Preheat oven to 375°F (190°C).
- 2. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
- 3. Beat in eggs one at a time, then stir in vanilla.
- 4. Add pistachio pudding mix and mix until well combined.
- 5. In a separate bowl, whisk together flour, baking soda, and salt.
- 6. Gradually add dry ingredients to wet ingredients, mixing until just combined.
- 7. Drop by rounded tablespoons onto ungreased baking sheets, leaving enough space between each cookie.
- 8. If desired, gently press a few chopped pistachios onto the top of each cookie before baking.
- 9. Bake for 8-10 minutes, or until the edges are lightly golden brown.
- 10. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely. Dust with powdered sugar if desired and enjoy.
