Description

The most indulgent Philly Cheesesteak Mac and Cheese made in one skillet with seasoned ground beef sautéed bell peppers and onion in a silky three-cheese cream sauce tossed with macaroni and reserved pasta water. A deeply comforting 30 minute dinner that combines two beloved classics into one extraordinary dish.

8 oz Dry Macaroni

1 lb Lean Ground Beef

1 cup White Onion chopped

2 cloves Garlic minced

2 cups Mixed Bell Peppers red green and yellow diced

2 tbsp Unsalted Butter

8 oz Light Cream Cheese softened

1 cup Shredded Mozzarella

4 slices Melting Cheese American or provolone

125ml Reserved Pasta Water plus more as needed

1 tsp Salt

1 tsp Black Pepper

1 tsp Paprika

1/2 tsp Chili Flakes

1/4 cup Fresh Parsley chopped for garnish optional


Instructions

1. Bring a large pot of salted water to a boil. Cook macaroni until al dente 8 to 10 minutes.

2. Reserve 125ml pasta water before draining. Drain pasta and set aside.

3. Melt butter in a large skillet over medium heat. Add garlic, onion, and bell peppers. Sauté 4 to 5 minutes until softened.

4. Add ground beef crumbled into the vegetables. Cook 5 to 7 minutes until browned. Drain excess fat.

5. Season with salt, pepper, paprika, and chili flakes.

6. Reduce heat to low. Add softened cream cheese and stir until fully melted into the mixture.

7. Add shredded mozzarella and cheese slices. Stir gently until completely melted and smooth.

8. Add cooked macaroni and reserved pasta water. Toss until every piece is coated in the creamy sauce.

9. Add more pasta water gradually if the sauce is too thick.

10. Taste and adjust seasoning. Serve immediately with fresh parsley.

Notes

Always reduce heat to low before adding any cheese to avoid a grainy sauce.

Use room temperature softened cream cheese for the smoothest most seamless melt.

Never skip the reserved pasta water. It keeps the sauce silky even as the pasta absorbs it.

The beef and vegetable filling can be made up to 3 days ahead and refrigerated.

Store refrigerated up to 3 days. Reheat gently on low heat with a splash of milk.
