- 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 pint cherry tomatoes
- 1 pound fresh mozzarella balls (bocconcini), small or ciliegine size
- 1/2 cup prepared basil pesto, plus more for serving
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Wooden or metal skewers
Instructions
- In a bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Add the chicken cubes and toss to coat. Marinate the chicken for at least 30 minutes in the refrigerator.
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
- Preheat your grill to medium heat.
- Thread the chicken, tomatoes, and mozzarella balls onto the skewers, alternating ingredients.
- Brush the skewers lightly with pesto.
- Grill for 8 to 10 minutes, turning occasionally, until the chicken is cooked through and no longer pink inside.
- Remove from grill and serve immediately with extra pesto, if desired.
