Ingredients
2 tablespoons olive oil
½ pound Italian sausage, casings removed
1 small onion, diced
1 cup mushrooms, sliced
1 cup bell peppers, diced
1 ½ cups pizza sauce
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
1 ½ cups shredded mozzarella cheese
¼ cup grated Parmesan cheese
1 batch pizza dough or store-bought crust
1 egg, beaten
Butter for greasing ramekins
Instructions
1. Preheat oven to 400°F (200°C) and grease four ramekins.
2. Cook sausage until browned, add onions, mushrooms, and peppers.
3. Add sauce, herbs, salt, and pepper. Simmer for 5 minutes.
4. Spoon filling into ramekins and top with cheeses.
5. Cover with dough circles and brush with egg wash.
6. Bake 20 to 25 minutes until golden and bubbly.
7. Let cool slightly before serving.
Notes
Use puff pastry for a flakier crust.
Add pepperoni or extra vegetables for variation.
Freeze baked pies for up to 2 months.
Reheat in oven at 350°F for 10 minutes.
