Description
A fast, crispy pepperoni quesadilla recipe packed with melted cheese, bold flavor, and done in five minutes flat.
Ingredients
8 flour tortillas (10-inch, room temperature)
8 ounces shredded whole-milk mozzarella cheese
1/3 pound sliced pepperoni (cup-and-char style preferred)
1 jar (16 oz) pizza sauce (use about 2 tablespoons per quesadilla for filling)
Optional: 1 cup sliced, sautéed cremini mushrooms
Optional: 1 small can sliced black olives, drained
Instructions
1. Heat a skillet over medium heat. Fry pepperoni slices for 2–3 minutes until crisp. Drain on paper towels.
2. Spread a thin layer of pizza sauce on half of one tortilla.
3. Add half the mozzarella, followed by pepperoni and any optional toppings. Top with remaining cheese.
4. Fold tortilla into a half-moon or top with another tortilla, sauce side down.
5. Preheat a skillet and brush lightly with butter or oil. Add quesadilla and cook for 2–3 minutes per side until golden and cheese is melted.
6. Let rest for 1 minute, then slice into wedges. Serve with extra warm pizza sauce for dipping.
Notes
• Use a hot skillet and minimal oil for the crispiest crust.
• Avoid overfilling the tortilla to prevent sogginess.
• Substitute with Italian sausage, ham, or chicken for variety.
• Mozzarella can be blended with provolone or fontina for more flavor.
