Description

The most tangy and creamy Pepperoncini Chicken Skillet made in one pan with golden seared chicken, a rich pepperoncini brine-based cream sauce, and fresh parsley. A deeply flavorful and effortless weeknight dinner ready in 40 minutes.


Ingredients

4 Boneless Skinless Chicken Breasts or Thighs

Salt and Black Pepper to taste

2 tbsp Extra Virgin Olive Oil

1 cup Pepperoncini Peppers chopped plus reserved brine

1 medium Yellow Onion chopped

3 cloves Garlic minced

1 cup Low-Sodium Chicken Broth

1/2 cup Heavy Cream

1 tsp Italian Seasoning

1/2 tsp Red Pepper Flakes

Salt and Black Pepper to taste

1/4 cup Fresh Parsley chopped

2 cups Cooked Pasta or Rice for serving optional


Instructions

1. Pat chicken dry with paper towels. Season both sides generously with salt and black pepper.

2. Heat olive oil in a large skillet over medium-high heat until shimmering.

3. Sear chicken 5 to 7 minutes per side until golden and cooked to 165°F. Remove to a plate.

4. Reduce heat to medium. Add chopped onion to the same skillet and sauté 5 minutes until translucent.

5. Add minced garlic and cook 1 minute until fragrant.

6. Deglaze with reserved pepperoncini brine scraping up all the browned bits.

7. Add chopped pepperoncini, chicken broth, Italian seasoning, and red pepper flakes. Simmer 5 minutes.

8. Reduce heat to low and stir in heavy cream.

9. Return chicken to the skillet and spoon sauce over the top. Simmer 5 minutes until sauce thickens slightly.

10. Adjust seasoning with salt and pepper. Scatter fresh parsley over the top and serve over pasta or rice.

Notes

Always use the reserved pepperoncini brine from the jar to deglaze for maximum tangy flavor.

Pat chicken completely dry before searing for a proper golden crust.

If sauce is too thin simmer uncovered a few minutes longer or add a cornstarch slurry.

Chicken thighs are a more forgiving and flavorful substitute for chicken breasts.

Store refrigerated in an airtight container for up to 4 days.
