- 2 cups all purpose flour
- 1 teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ½ teaspoon salt
- ½ cup (1 stick) unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- 1 cup mashed ripe bananas (about 3 medium)
- ½ cup creamy peanut butter
- ¼ cup milk
- ½ cup chopped walnuts or pecans, optional
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the mashed bananas and peanut butter. Ensure the peanut butter is well incorporated.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix!
- Fold in the chopped walnuts or pecans, if using.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 50 60 minutes, or until a wooden skewer inserted into the center comes out clean. If the top starts to brown too quickly, tent it with foil.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
