This One-Pot Lemon Herb Chicken & Rice recipe is a cozy and flavorful meal perfect for easy weeknight dinners.

- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup long grain rice, rinsed
- 2 cups chicken broth
- 1/2 cup dry white wine (optional, can substitute with more chicken broth)
- 1 lemon, zested and juiced
- 2 tablespoons fresh herbs, chopped (parsley, thyme, rosemary)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional: grated Parmesan cheese, extra lemon wedges for serving
Instructions
- In a large pot or Dutch oven, heat olive oil over medium high heat. Add chicken and cook until browned on all sides. Don’t overcrowd the pot; you may need to do this in batches. Remove the chicken from the pot and set aside.
- Add onion and garlic to the pot and cook until softened, about 3 minutes.
- Add the rinsed rice to the pot and stir for 1 minute to toast it lightly. This helps develop the flavor and prevents stickiness.
- Pour in chicken broth and white wine (if using), and bring to a boil. Stir in lemon zest, lemon juice, salt, and pepper.
- Return the chicken to the pot. Reduce heat to low, cover, and simmer for 20 minutes, or until rice is cooked through and liquid is absorbed.
- Stir in fresh herbs. Let stand for 5 minutes before serving. The rice will continue to absorb any remaining liquid and become even more tender.
