- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 2 cups beef broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups small pasta shells
- 1 cup shredded cheddar cheese
Instructions
- In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
- Add the chopped onion and minced garlic to the pot and cook until softened, about 3 minutes.
- Stir in the diced tomatoes (undrained), cream of mushroom soup, beef broth, Italian seasoning, salt, and pepper. Bring to a boil.
- Add the pasta shells, stirring to ensure they are submerged in the liquid.
- Reduce heat to low, cover, and simmer for 15 to 20 minutes, until pasta is cooked and liquid absorbed. Stir occasionally.
- Remove from heat and stir in the cheddar cheese until melted and creamy.
- Let stand for a few minutes to thicken before serving.
