Description

A classic and easy Mother’s Day Cake recipe that’s moist, delicious, and perfect for celebrating the special women in your life.

Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, softened
  • 1 cup milk
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup milk
  • 2 teaspoons vanilla extract
  • Optional: Food coloring for a floral cake design

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Add the softened butter and milk to the dry ingredients. Beat with an electric mixer on low speed until just combined, then increase to medium speed and beat for 2 minutes.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  8. While the cakes are cooling, prepare the frosting. In a large bowl, beat the softened butter with an electric mixer until light and fluffy.
  9. Gradually add the powdered sugar, one cup at a time, beating well after each addition.
  10. Add the milk and vanilla extract. Beat until the frosting is smooth and creamy.
  11. Once the cakes are completely cool, frost the top of one cake layer with half of the frosting. Place the second cake layer on top and frost the entire cake with the remaining frosting.
  12. Decorate as desired! Consider using sprinkles, fresh berries, or edible flowers for a beautiful presentation.
