- 2 overripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- A pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup walnuts, chopped
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a mixing bowl, mash the overripe bananas with a fork until smooth.
- Stir the melted butter into the mashed bananas.
- Mix in the baking soda and salt.
- Stir in the sugar, beaten egg, and vanilla extract.
- Mix in the flour until just combined.
- Fold in the chopped walnuts.
- Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for about 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow to cool before serving.
Notes
Use very ripe bananas for better flavor and moisture. Do not overmix the batter; mix until just combined for fluffy muffins. You can replace walnuts with pecans or add chocolate chips for variation.
