  • 3 large eggs
  • ⅛ teaspoon salt

Instructions

  1. 1. Preheat your oven to 325°F (160°C). Line a 24 cup muffin tin with paper liners.
  2. 2. Make the Crust: In a medium bowl, combine the crushed chocolate wafer cookies and melted butter. Mix well until the crumbs are moistened.
  3. 3. Press Crust into Liners: Press about 1 ½ tablespoons of the crumb mixture into the bottom of each muffin liner, packing it firmly.
  4. 4. Prepare the Filling: In a large bowl, beat the softened cream cheese and sugar with an electric mixer until smooth and creamy.
  5. 5. Add Extracts and Color: Beat in the vanilla extract and peppermint extract. Add green food coloring, a few drops at a time, until you reach your desired shade of green.
  6. 6. Incorporate the Eggs: Beat in the eggs one at a time, mixing until just combined. Be careful not to overmix.
