Description
The most charming Mini Raspberry Tarts made with ready-made mini pie shells filled with frozen raspberries lemon juice sugar and cornstarch baked until golden and glossy and finished with a heart-shaped pastry decoration pressed into each center. A completely easy and beautiful individual spring dessert ready in 50 minutes.
Ingredients
17 Ready-Made Mini Pie Shells 12 for tarts plus 5 for hearts
2 cups Frozen Raspberries do not thaw
Juice of 1/2 Lemon
1/2 cup Granulated Sugar
1 tbsp Cornstarch
Instructions
1. Preheat oven to 350°F.
2. Thaw frozen pie shells 15 minutes if needed. Place 12 on a baking sheet.
3. Add frozen raspberries to a large bowl. Stir in lemon juice.
4. Coat raspberry mixture with sugar and cornstarch. Toss gently without crushing berries.
5. Scoop filling into each of the 12 shells just below the rim. Do not overfill.
6. Bake 20 to 25 minutes until crust is golden and filling is bubbling and set.
7. Remove and transfer to cooling rack.
8. Roll out remaining 5 pie shells flat.
9. Use a heart cookie cutter to cut hearts from each flattened shell.
10. Place on parchment-lined baking sheet. Bake 10 minutes until golden.
11. Cool both tarts and hearts completely on wire rack.
12. Press one baked pastry heart into the center of each cooled raspberry tart.
