Description
The most tender and beautiful Mexican Pink Cookies made by creaming unsalted butter with powdered sugar until pale and cloud-like then adding vanilla salt and pink food coloring and flour rolled into 2-tablespoon balls pressed flat with a glass bottom to 1/2 inch thickness and baked until the bottoms are golden then immediately sprinkled with white sugar. A completely festive Cinco de Mayo Polvorones recipe.
Ingredients
1 cup Unsalted Butter softened to room temperature
1 cup Powdered Sugar
2 tsp Pure Vanilla Extract
1/8 tsp Salt
2 cups All-Purpose Flour
Pink or Red Gel Food Coloring
Granulated White Sugar for sprinkling immediately after baking
Instructions
1. Preheat oven to 350°F. Line baking sheet with parchment paper.
2. Beat softened butter and powdered sugar with paddle attachment until pale light and genuinely fluffy. Do not rush.
3. Add vanilla, salt, and food coloring. Mix until evenly colored and no streaks remain.
4. Add flour and mix until just combined. Do not overmix.
5. Scoop 2-tablespoon dough balls. Roll smooth between palms. Place 3 inches apart on sheet.
6. Press each ball flat to 1/2 inch thickness using flat bottom of a glass.
7. Bake 13 to 15 minutes until bottoms are golden. Tops should remain pink.
8. Remove from oven and immediately sprinkle generously with white granulated sugar while still warm.
9. Cool on baking sheet before serving.
