  • Total Time: 5 hours 20 minutes
  • Yield: 12 servings 1x

Description

A fun and festive Lucky Charms Cheesecake recipe that’s perfect for St. Patrick’s Day or any day you want a little bit of magic! This creamy cheesecake is loaded with Lucky Charms cereal for a sweet and crunchy treat.

Ingredients

Scale
  • For the Crust:
  • 1 ½ cups crushed Lucky Charms cereal
  • 5 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • For the Filling:
  • 3 (8 ounce) packages cream cheese, softened
  • 1 ¼ cups granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • ½ cup sour cream
  • 1 cup Lucky Charms cereal, roughly crushed
  • For the Topping:
  • 1 cup whipped cream, or more, to taste
  • ½ cup Lucky Charms marshmallows (picked out from the cereal)

Instructions

  1. 1. Prepare the Crust: In a medium bowl, combine the crushed Lucky Charms cereal, melted butter, and sugar. Press the mixture firmly into the bottom of a 9-inch springform pan.
  2. 2. Bake the Crust: Bake the crust in a preheated oven at 350°F (175°C) for 8 minutes. Remove from oven and let cool completely.
  3. 3. Make the Filling: In a large bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the vanilla extract and mix well.
  4. 4. Add Eggs and Sour Cream: Beat in the eggs one at a time, then stir in the sour cream until just combined. Be careful not to overmix.
  5. 5. Incorporate the Cereal: Gently fold in the crushed Lucky Charms cereal into the cheesecake filling.
  6. 6. Pour and Bake: Pour the cheesecake filling over the cooled crust. Spread evenly.
  7. 7. Bake the Cheesecake: Bake in the preheated oven for 50 to 60 minutes, or until the edges are set but the center still has a slight jiggle.
  8. 8. Cool and Chill: Turn off the oven and let the cheesecake cool inside the oven with the door slightly ajar for 1 hour. This prevents cracking. Remove from the oven and cool completely on a wire rack. Cover and refrigerate for at least 4 hours, or preferably overnight.
  9. 9. Decorate: Remove the cheesecake from the springform pan. Top with dollops of whipped cream and sprinkle with Lucky Charms marshmallows.
