Description

The most crispy and bold Loaded Fiesta Potato Bowls made with smoked paprika and cumin roasted potato cubes topped with seasoned taco beef melted cheddar sour cream salsa green onions and cilantro. A completely customizable and deeply satisfying 45 minute Tex-Mex dinner.


Ingredients

Scale

4 medium Russet or Yukon Gold Potatoes diced into 3/4-inch cubes

2 tbsp Olive Oil

1 tsp Chili Powder

1 tsp Smoked Paprika

1 tsp Garlic Powder

1/2 tsp Ground Cumin

Salt and Pepper to taste

1 lb Ground Beef or black beans for vegetarian

1 packet Taco Seasoning or homemade blend

1/4 cup Water

1 cup Shredded Cheddar or Mexican Blend Cheese

1/2 cup Sour Cream or Greek Yogurt

1/2 cup Salsa

1/4 cup Sliced Green Onions

1/4 cup Fresh Cilantro chopped

Optional: diced tomatoes corn jalapeños black olives


Instructions

1. Preheat oven to 425°F.

2. Dice potatoes into 3/4-inch cubes keeping skins on. Toss with olive oil, chili powder, paprika, garlic powder, cumin, salt, and pepper.

3. Spread in a single layer on a metal baking sheet with space between each piece.

4. Roast 25 to 30 minutes flipping halfway until golden and crispy.

5. While potatoes roast, brown ground beef in a skillet over medium-high heat 5 to 7 minutes. Drain excess fat.

6. Add taco seasoning and water. Simmer 2 to 3 minutes until thickened and absorbed.

7. Transfer hot roasted potatoes to individual bowls immediately.

8. Sprinkle cheese over hot potatoes and let melt 1 minute.

9. Top with seasoned beef, sour cream, salsa, green onions, and cilantro.

10. Add optional toppings of choice and serve immediately.

Notes

Use a metal baking sheet not glass for the crispiest potatoes.

Never overcrowd the baking sheet. Space between pieces is essential for crisping.

Add a pinch of salt to the potatoes immediately after they come out of the oven.

Spread cheese on the hot potatoes before adding any other toppings to melt properly.

Store components separately refrigerated up to 4 days. Reheat potatoes in the oven or air fryer for best crispiness.
