  • 50 grams warm water
  • 350 grams bread flour
  • 250 grams warm water
  • 8 grams salt
  • 100 grams sugar
  • Zest of 2 lemons
  • 1 cup fresh blueberries
  • 2 tablespoons flour

Instructions

  1. Prepare the Levain (Sourdough Starter): In a small bowl, mix together the active sourdough starter, bread flour, and warm water. Cover loosely and let it sit at room temperature for 4-6 hours, or until doubled and bubbly.
  2. Mix the Dough: In a large bowl, combine the bread flour, warm water, salt, sugar, and lemon zest. Add the prepared levain. Mix until a shaggy dough forms.
  3. Autolyse: Cover the dough and let it rest for 30 minutes. This allows the flour to fully hydrate, resulting in a better texture.
  4. Knead the Dough: Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, or until smooth and elastic. Alternatively, use a stand mixer with a dough hook attachment.
  5. First Rise (Bulk Fermentation): Place the dough in a lightly oiled bowl, turning to coat. Cover and let it rise in a warm place for 4-6 hours, or until doubled. Perform stretch and folds every 30-60 minutes during the first 2 hours.
  6. Prepare the Blueberries: Gently toss the fresh blueberries with flour. This helps prevent them from sinking to the bottom of the loaf during baking.
  7. Shape the Dough: Turn the dough out onto a lightly floured surface. Gently pat it into a rectangle. Sprinkle the blueberries evenly over the dough.
  8. Form the Loaf: Fold the dough in thirds, like you’re folding a letter. Then, shape it into a round or oval loaf.
  9. Second Rise (Proofing): Place the shaped loaf in a floured banneton basket or a bowl lined with a floured kitchen towel. Cover and refrigerate for 12-24 hours.
  10. Preheat Oven: Preheat your oven to 450°F (232°C) with a Dutch oven inside.
  11. Score the Loaf: Carefully remove the hot Dutch oven from the oven. Gently place the loaf inside. Score the top of the loaf with a sharp knife or lame.
  12. Bake: Cover the Dutch oven and bake for 20 minutes. Then, remove the lid and bake for an additional 25-30 minutes, or until the loaf is golden brown and the internal temperature reaches 200°F (93°C).
  13. Cool: Transfer the baked Lemon Blueberry Sourdough Bread to a wire rack to cool completely before slicing and serving.
