  • Total Time: 2 hours 30 minutes
  • Yield: 4 servings 1x

Description

A refreshing Lavender Iced Tea with Blueberry Foam recipe! This easy summer drink combines floral flavors with a sweet and tangy foam for a beautiful and delicious treat.

Ingredients

Scale
  • 6 cups water
  • 4 bags black tea (or your favorite tea)
  • 2 tablespoons dried culinary lavender
  • 1/2 cup honey (or sugar, to taste)
  • Ice
  • 1 cup fresh or frozen blueberries
  • 1/4 cup heavy cream
  • 1/4 cup milk
  • 2 tablespoons powdered sugar

Instructions

  1. 1. Make the Lavender Tea: In a large pot, bring the water to a boil. Remove from heat and add the tea bags and dried lavender. Steep for 5 minutes.
  2. 2. Sweeten the Tea: Remove the tea bags and strain the tea through a fine mesh sieve to remove the lavender. Stir in the honey (or sugar) until dissolved.
  3. 3. Chill the Tea: Let the tea cool to room temperature, then refrigerate for at least 2 hours, or until thoroughly chilled.
  4. 4. Prepare the Blueberry Puree: While the tea is chilling, combine the blueberries and a tablespoon of water in a small saucepan. Cook over medium heat until the blueberries soften and release their juices, about 5-7 minutes.
  5. 5. Blend the Blueberry Puree: Transfer the blueberry mixture to a blender or food processor and blend until smooth. Strain through a fine mesh sieve to remove the seeds and skins. Let cool completely.
  6. 6. Make the Blueberry Foam: In a medium bowl, whisk together the heavy cream, milk, and powdered sugar until soft peaks form. Gently fold in the cooled blueberry puree.
  7. 7. Assemble the Drink: Fill glasses with ice. Pour the chilled lavender iced tea over the ice, leaving about an inch of space at the top.
  8. 8. Top with Blueberry Foam: Spoon the blueberry foam over the iced tea. Garnish with fresh blueberries or a sprig of lavender, if desired.
