This authentic Italian pizza recipe creates a thin, crispy, and chewy crust with simple ingredients and a cold water method that anyone can master.
Ingredients
5 cups all-purpose flour (or Italian “00” flour for a finer texture)
1.5 tsp instant or active dry yeast
1.5 tsp sea salt
2.25 cups cold water
1 tbsp extra virgin olive oil (plus more for drizzling)
Semolina flour or cornmeal for dusting
Arrabbiata sauce
Smoked mozzarella cheese
Caramelized onions
Sautéed mushrooms
Heirloom tomatoes, thinly sliced
Roasted peppers
Ricotta meatballs
Fresh basil
Instructions
1. Preheat oven to 525°F (275°C) with pizza stone on upper rack for 45–60 minutes.
2. In stand mixer, combine flour, yeast, and salt. Mix briefly on low speed.
3. Slowly add cold water while mixing. Switch to dough hook once combined.
4. Knead on low for 8–10 minutes until smooth and slightly tacky. Adjust with flour or water if needed.
5. Divide into 6 equal balls, place on oiled tray, drizzle with olive oil, and cover. Let rise 2 hours.
6. Flatten each dough ball into a 10-inch round, keeping a raised edge for the crust.
7. Dust a pizza peel with semolina. Add dough, sauce, cheese, and toppings sparingly.
8. Bake directly on stone for 5–7 minutes until golden and bubbly.
9. Garnish with basil, let rest 2–3 minutes, then slice and serve.
Notes
Use “00” flour for a delicate, chewy crust.
Avoid overloading toppings to prevent sogginess.
Finish under broiler for 30–60 seconds for charred edges.
Freeze dough balls up to 3 months; thaw before use.
