  • 0.25 cup neutral oil (canola or vegetable)
  • 3 large eggs (room temperature)
  • 1 cup whole milk (room temperature)
  • 1 cup mango puree (from ripe mango or canned)
  • 2 teaspoons vanilla extract
  • 1 tablespoon fresh lemon juice
  • 1.5 cups diced fresh strawberries (pat very dry)
  • 1 cup diced ripe mango
  • 1 tablespoon all-purpose flour (for tossing fruit)
  • 0.5 cup strawberry jam (for filling)
  • 8 ounces cream cheese, softened (for frosting)
  • 1.5 cups heavy cream, cold (for frosting)
  • 0.75 cup powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 0.125 teaspoon fine sea salt (for frosting)
  • 1 cup fresh strawberries (for garnish)
  • 1 cup mango slices (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix the flour, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, cream the softened butter and granulated sugar until light and fluffy. Add the oil and mix well.
  4. Beat in the eggs one at a time, mixing well after each addition. Add the milk, mango puree, vanilla extract, and lemon juice, and mix until smooth.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. In a small bowl, toss the diced strawberries and mango with 1 tablespoon of flour. Gently fold the fruit into the batter.
  7. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. Once cooled, spread strawberry jam between the layers of the cake.
  10. For the frosting, beat the cream cheese until smooth. Gradually add the cold heavy cream, powdered sugar, vanilla extract, and sea salt. Whip until fluffy.
  11. Frost the top and sides of the cake with the cream cheese frosting.
  12. Garnish with fresh strawberries and mango slices.

Notes

Make sure ingredients are at room temperature for better mixing. Pat diced fruit dry to prevent the batter from becoming too wet.
