Description

The most stunning Hydrangea Cupcakes made with a rich moist eggless chocolate base of flour sugar sifted cocoa baking soda salt warm brewed coffee white vinegar vanilla and olive oil baked at 350°F for 18 to 20 minutes topped with a silky cream cheese frosting of softened butter powdered sugar sea salt and cream cheese tinted with gel food coloring in hydrangea shades and piped with a Wilton 2D tip in gorgeous two-tone floral hydrangea petal patterns. A completely breathtaking spring celebration cupcake recipe.


Ingredients

1 1/2 cups All-Purpose Flour

1 cup Granulated Sugar

1/4 cup Unsweetened Cocoa Powder sifted

1 tsp Baking Soda

1/2 tsp Salt

1 cup Warm Freshly Brewed Coffee

1 tbsp White Vinegar

2 tsp Pure Vanilla Extract

1/3 cup Olive Oil or canola or vegetable oil

1 stick 8 tbsp Unsalted Butter softened for frosting

1 1/2 cups Powdered Sugar

1/8 tsp Fine Sea Salt

8 oz Full-Fat Cream Cheese softened and cut into 8 pieces

Gel Food Coloring blue purple pink green as desired


Instructions

1. Preheat oven to 350°F 175°C. Line 12-cup muffin tin with liners. Brew fresh coffee. Set aside to cool to warm.

2. Whisk flour, sugar, sifted cocoa, baking soda, and salt in large bowl.

3. Combine warm coffee, vinegar, vanilla, and oil in separate bowl.

4. Gradually whisk wet into dry until just combined. Batter will be slightly lumpy. Do not overmix.

5. Fill liners 2/3 full.

6. Bake center rack 18 to 20 minutes until toothpick clean.

7. Transfer to wire rack. Cool completely.

8. Beat softened butter with powdered sugar and salt on low until combined. Increase to medium-high 2 to 3 minutes until pale and fluffy.

9. Add softened cream cheese one piece at a time beating until smooth after each. Scrape bowl.

10. Divide frosting. Tint each portion with gel food coloring to hydrangea shades.

11. Fit piping bag with Wilton 2D tip. Load two colors on opposite sides for two-tone effect.

12. Pipe from outer edge inward using press-lift-release motion to create petal patterns covering entire cupcake surface.

13. Chill piping bag briefly if frosting becomes too soft.
