- 3–4 pound corned beef brisket, with spice packet
- 1 large yellow onion, quartered
- 4 carrots, peeled and chopped
- 4 celery stalks, chopped
- 4 cloves garlic, minced
- 1 tablespoon black peppercorns
- 2 bay leaves
- 1 teaspoon dried thyme
- Water
Instructions
- Rinse the corned beef brisket under cold water.
- Place the brisket in a large pot or Dutch oven. Add the spice packet, onion, carrots, celery, garlic, peppercorns, bay leaves, and thyme.
- Cover the brisket with enough water to completely submerge it.
- Bring to a boil, then reduce heat to low, cover, and simmer for 3-4 hours, or until fork tender.
- Remove the brisket and let it rest for 10-15 minutes.
- Strain the cooking liquid.
- Slice the corned beef against the grain and serve!
