- 1 (15 ounce) can chickpeas, drained and rinsed
- 1/4 cup tahini
- 1/4 cup lemon juice, freshly squeezed
- 2 cloves garlic, minced
- 2 tablespoons olive oil, plus more for drizzling
- 2 to 4 tablespoons ice water
- 1/2 teaspoon salt, or more to taste
- Pinch of paprika, for garnish
- Optional: a handful of fresh parsley, finely chopped
Instructions
- Drain and rinse the chickpeas. For the smoothest hummus, gently rub the chickpeas between your fingers or in a clean kitchen towel to remove the skins.
- In a food processor, combine the chickpeas, tahini, lemon juice, garlic, olive oil, and salt.
- Process the mixture for about 2 minutes, scraping down the sides as needed.
- With the food processor running, slowly add ice water, one tablespoon at a time, until the hummus reaches your desired consistency.
- Taste the hummus and adjust the seasonings as needed. Add more salt, lemon juice, or garlic to your liking.
- Transfer the hummus to a serving bowl, drizzle with olive oil, sprinkle with paprika, and garnish with fresh parsley (if using). Serve immediately or chill for later.
