  • 1 teaspoon sugar
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 2 1/2 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 2 tablespoons olive oil, plus more for greasing
  • 1 (28 ounce) can crushed tomatoes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 8 ounces fresh mozzarella, sliced
  • 1/4 cup fresh basil leaves

Instructions

  1. In a large bowl, dissolve sugar in warm water. Sprinkle yeast over the top and let stand for 5-10 minutes, until foamy.
  2. Add flour, salt, and olive oil to the yeast mixture. Stir until a shaggy dough forms.
  3. Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, until smooth and elastic. If the dough is too sticky, add a little more flour, a tablespoon at a time.
  4. Lightly grease a large bowl with olive oil. Place the dough in the bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 1 hour, or until doubled in size.
  5. While the dough is rising, prepare the sauce. In a medium bowl, combine crushed tomatoes, oregano, garlic powder, salt, and pepper.
  6. Preheat your oven to 450°F (232°C). Place a pizza stone or baking sheet in the oven while it preheats. This will help ensure a crispy crust.
  7. Punch down the dough and turn it out onto a lightly floured surface. Divide the dough in half (if making two smaller pizzas) or leave it whole for one large pizza. Roll or stretch the dough into your desired shape.
  8. Carefully transfer the dough to a piece of parchment paper. Spread the tomato sauce evenly over the dough, leaving a small border. Arrange mozzarella slices over the sauce.
  9. Carefully slide the parchment paper with the pizza onto the preheated pizza stone or baking sheet. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
  10. Remove the pizza from the oven and let it cool slightly. Sprinkle fresh basil leaves over the top. Slice and serve immediately.
