Ingredients

Scale

2 cups All-Purpose Flour

2 cups Granulated Sugar

3/4 cup Unsweetened Cocoa Powder

2 tsp Baking Powder

1 1/2 tsp Baking Soda

1 tsp Salt

1 cup Whole Milk

1/2 cup Vegetable Oil

2 large Eggs

2 tsp Pure Vanilla Extract

1 cup Boiling Water

1/2 cup Unsalted Butter softened for frosting

1/2 cup Unsweetened Cocoa Powder for frosting

4 cups Powdered Sugar sifted

1 tsp Pure Vanilla Extract for frosting

Pinch of Salt for frosting

6 to 8 tbsp Whole Milk for frosting

Instructions

1. Line two 9-inch pans with parchment. Spray with non-stick. Preheat oven to 350°F.

2. Whisk flour, sugar, cocoa, baking powder, baking soda, and salt in large bowl.

3. Whisk in milk, oil, eggs, and vanilla until smooth.

4. Stir in boiling water mixing until smooth. Batter will be very thin. This is correct.

5. Divide evenly between prepared pans.

6. Bake 30 to 35 minutes until toothpick clean.

7. Cool 10 minutes in pans. Invert onto cooling racks.

8. Wrap each warm layer tightly in plastic. Place in freezer several hours or overnight. This traps steam for maximum moisture.

9. For frosting beat all frosting ingredients starting with 6 tbsp milk until smooth and spreadable. Add more milk as needed.

10. Assemble: place first layer on stand. Spread 1 cup frosting over top. Place second layer. Frost sides and top.
