- 2 cups Heritage Flour
- 1 tablespoon baking powder
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 cup (1 stick) cold unsalted butter, cut into cubes
- 3/4 cup cold milk
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the heritage flour, baking powder, sugar, and salt.
- Add the cold, cubed butter to the flour mixture. Using a pastry blender or your fingertips, cut the butter into the flour until the mixture resembles coarse crumbs.
- Pour in the cold milk and gently stir until just combined.
- Turn the dough out onto a lightly floured surface. Gently pat it down to about 3/4-inch thickness.
- Use a 2-inch biscuit cutter to cut out the biscuits.
- Place the biscuits onto the prepared baking sheet, leaving a little space between each.
- Brush the tops of the biscuits with the egg wash of (1 large egg and 1 tablespoon milk).
- Bake for 12 to 15 minutes, or until the biscuits are golden brown.
- Remove from the oven and let cool slightly before serving.
