- 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch chunks
- 1/2 cup cornstarch
- 1 cup fresh orange juice
- 1/4 cup low-sodium soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 1 tablespoon grated fresh ginger
- 2 cloves garlic, minced
- 1 teaspoon red pepper flakes (optional)
- 1 tablespoon cornstarch
- 1/4 cup water
- Cooked brown rice or quinoa, for serving
- Sesame seeds, for garnish
- Chopped green onions, for garnish
Instructions
- Place the chicken pieces in a large bowl and toss with the cornstarch until evenly coated.
- In a separate bowl, whisk together the orange juice, soy sauce, rice vinegar, honey, ginger, garlic, and red pepper flakes (if using).
- In a small bowl, whisk together the cornstarch and water to form a slurry.
- Heat a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 6-8 minutes. Work in batches if necessary to avoid overcrowding the pan.
- Pour the orange sauce over the chicken and bring to a simmer.
- Stir in the cornstarch slurry and cook until the sauce has thickened, about 1-2 minutes.
- Serve the Healthy Orange Chicken over cooked brown rice or quinoa.
