Description
A simple and flavorful Mediterranean orzo bake with feta cheese, fresh vegetables, and herbs. A quick and easy weeknight meal!

- 1 pound orzo pasta
- 8 ounces block of feta cheese
- 1 pint cherry tomatoes, halved
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, chopped
- 1/2 red onion, thinly sliced
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh oregano, chopped
- Salt and pepper to taste
- 1/4 cup grated parmesan cheese (optional, for topping)
Instructions
- Preheat your oven to 400°F (200°C).
- Cook the orzo according to package directions until al dente. Drain well.
- While the orzo is cooking, prepare the vegetables: Halve the cherry tomatoes, chop the bell peppers and zucchini, and slice the red onion. Mince the garlic.
- In a large baking dish, combine the cooked orzo, halved cherry tomatoes, chopped bell peppers, chopped zucchini, sliced red onion, and minced garlic.
- Drizzle with olive oil, season with salt and pepper, and toss everything together until well combined.
- Place the block of feta cheese in the center of the orzo and vegetable mixture.
- Bake for 20-25 minutes, or until the feta is softened and slightly golden, and the vegetables are tender.
- Remove from the oven and sprinkle with fresh basil and oregano.
- If desired, sprinkle with grated parmesan cheese before serving.
- Crumble the feta and stir to combine. Serve warm and enjoy!
