Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion, carrots, and celery. Sauté for about 5-7 minutes, until softened.
- Add the minced garlic and ginger to the pot. Cook for another minute, until fragrant, stirring constantly to avoid burning.
- Pour in the chicken broth and bring to a gentle simmer.
- Add the shredded cooked chicken and egg noodles to the simmering broth.
- Cook the noodles according to package directions, usually about 8-10 minutes, or until tender.
