A rich and decadent Guinness Chocolate Cake recipe perfect for St. Patrick’s Day or any celebration.

- 1 cup Guinness stout
- 1 cup (2 sticks) unsalted butter
- ¾ cup unsweetened cocoa powder
- 2 cups granulated sugar
- 1 ½ cups all purpose flour
- 1 ½ teaspoons baking soda
- ¾ teaspoon salt
- 2 large eggs
- ¾ cup sour cream
- 1 ½ teaspoons vanilla extract
- 8 ounces cream cheese, softened
- 1 cup (2 sticks) unsalted butter, softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9 inch round cake pan.
- In a medium saucepan, combine Guinness and butter over medium heat. Cook until butter is melted. Add cocoa powder and whisk until smooth. Remove from heat.
- In a large bowl, whisk together sugar, flour, baking soda, and salt.
- Pour Guinness mixture into flour mixture and whisk until well combined.
- In a separate bowl, whisk together eggs, sour cream, and vanilla extract. Add to Guinness chocolate mixture and stir until just combined. Do not overmix!
- Pour batter into prepared cake pan and bake for 30 35 minutes, or until a toothpick inserted into center comes out clean.
- Let cake cool in pan for 10 minutes before inverting onto a wire rack to cool completely.
- While cake is cooling, prepare cream cheese frosting. In a large bowl, beat cream cheese and butter until light and fluffy. Gradually add powdered sugar, beating until smooth. Stir in vanilla extract.
- Once cake is completely cool, frost top with cream cheese frosting. Add sprinkles for a festive St. Patrick’s Day touch, if desired.
