- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 bell pepper (any color), diced
- 1 teaspoon ground ginger
- 1/2 teaspoon red pepper flakes (optional)
- 1/4 cup low sodium soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 head of butter lettuce, leaves separated
- 1 cup cooked brown rice or quinoa (optional)
- 1/2 cup shredded carrots
- 1/4 cup chopped green onions
- 2 tablespoons sesame seeds
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned, breaking it up with a spoon. Drain any excess grease.
- Add diced onion and bell pepper to the skillet. Cook until softened, about 5 minutes. Stir in minced garlic, ground ginger, and red pepper flakes (if using), and cook for another minute until fragrant.
- In a small bowl, whisk together low sodium soy sauce, rice vinegar, honey, and sesame oil. Pour the sauce over the ground turkey and vegetables in the skillet.
- Bring the mixture to a simmer and cook for about 5 minutes, stirring occasionally, until the sauce has thickened slightly.
- Wash and gently dry the butter lettuce leaves. If using, place a scoop of cooked brown rice or quinoa in the bottom of each lettuce cup.
- Spoon the ground turkey mixture into the lettuce cups. Top with shredded carrots, chopped green onions, and sesame seeds.
- Serve immediately and enjoy!
