Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 ¾ cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • **For the Buttercream Frosting:**
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • ½ cup milk
  • 2 teaspoons vanilla extract
  • Food coloring (optional)
  • **For Decorations:**
  • Graduation-themed candies or sprinkles
  • Mini graduation cap toppers
  • Edible glitter (optional)
  • Fresh berries (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Beat until just combined.
  6. Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes before inverting them onto a wire rack to cool completely.
  8. While the cakes are cooling, prepare the buttercream frosting. In a large bowl, beat the softened butter until smooth and creamy.
  9. Gradually add the powdered sugar, alternating with the milk, beating until light and fluffy. Stir in the vanilla extract. Add food coloring, if desired.
  10. Once the cakes are completely cool, level the tops with a serrated knife, if necessary. Place one cake layer on a serving plate or cake stand. Spread a generous layer of buttercream frosting over the top.
  11. Carefully place the second cake layer on top of the frosting. Frost the entire cake with the remaining buttercream frosting.
  12. Decorate the cake with graduation-themed candies, sprinkles, mini graduation cap toppers, edible glitter, and fresh berries. Get creative with your design!
