Description

The most creamy and satisfying Garlic Parmesan Pasta bowl made with penne in a silky light cream cheese almond milk and Parmesan sauce with sautéed garlic topped with grilled chicken for 36 grams of protein per serving. A completely easy and high protein 20-minute weeknight dinner and meal prep recipe.


Ingredients

Scale

2 oz Dry Penne or Rigatoni yields about 1 1/2 cups cooked

4.25 oz Grilled Chicken Breast sliced pre-cooked or rotisserie

1 tsp Olive Oil

1 clove Garlic minced

2 tbsp Light Cream Cheese

1 tbsp Grated Parmesan freshly grated from the block

2 tbsp Unsweetened Almond Milk or milk of choice

Salt and Black Pepper to taste

Fresh Parsley or Fresh Spinach optional


Instructions

1. Cook penne or rigatoni in salted boiling water 8 to 9 minutes until just al dente.

2. Reserve 1/2 cup pasta water before draining. Drain but do not rinse.

3. Heat olive oil in a non-stick skillet over medium heat.

4. Add minced garlic and sauté 30 to 45 seconds until fragrant and lightly golden. Watch closely.

5. Reduce heat to medium-low. Add cream cheese and almond milk.

6. Whisk continuously until completely smooth with no lumps about 1 to 2 minutes.

7. If sauce is too thick add reserved pasta water a tablespoon at a time.

8. Stir in Parmesan. Season with salt and pepper.

9. Add drained pasta and toss with tongs 1 minute until every piece is coated.

10. If using spinach add now and toss until wilted.

11. Transfer to bowl and top with sliced grilled chicken.

12. Garnish with extra Parmesan and parsley.
