- 1 lb chicken breast, cut into bite-sized pieces
- 1 can coconut milk
- 2 tablespoons Thai red curry paste
- 2 tablespoons fish sauce
- 1 tablespoon brown sugar
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 bell pepper, sliced
- 1 cup fresh basil leaves
- 1 lime, juiced
- Cooked rice for serving
Instructions
- In a large pan, heat the vegetable oil over medium heat.
- Add minced garlic and grated ginger; sauté until fragrant.
- Add the chicken pieces and cook until browned.
- Stir in the red curry paste, fish sauce, brown sugar, and coconut milk.
- Bring to a simmer, then add the sliced bell pepper.
- Cook for about 15 minutes until the chicken is cooked through.
- Remove from heat and stir in fresh basil and lime juice. Serve over cooked rice.
Notes
For a spicier dish, add more red curry paste. Use low-fat coconut milk for a lighter version.
