  • 2 cups all-purpose flour
  • 1 cup (2 sticks) unsalted butter, cold and cubed
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • For the Strawberry Filling:
  • 1 pound fresh strawberries, hulled and sliced
  • ½ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/4 cup water
  • Pinch of salt

Instructions

  1. Make the Shortbread Dough: In a large bowl, whisk together flour, powdered sugar, and salt. Cut in the cold butter using a pastry blender or your fingertips, until the mixture resembles coarse crumbs.
  2. Add Vanilla: Stir in the vanilla extract. The dough should start to come together.
  3. Form the Dough: Gently knead the dough until it forms a smooth ball. Flatten into a disc, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  4. Prepare the Strawberry Filling: In a medium saucepan, combine sliced strawberries, granulated sugar, cornstarch, lemon juice, water, and a pinch of salt.
  5. Cook the Filling: Cook over medium heat, stirring constantly, until the mixture thickens and the strawberries soften, about 8 to 10 minutes. Remove from heat and let cool completely.
  6. Roll Out the Dough: Preheat oven to 350°F (175°C). On a lightly floured surface, roll out the chilled shortbread dough to about 1/4 inch thickness.
  7. Cut Out the Hearts: Use a heart shaped cookie cutter to cut out cookies. You’ll need an equal number of whole hearts and hearts with a smaller heart cut out of the center.
  8. Bake the Cookies: Place the cookies on a baking sheet lined with parchment paper. Bake for 10-12 minutes, or until lightly golden around the edges.
  9. Cool and Fill: Let the cookies cool completely on a wire rack. Once cool, spread the cooled strawberry filling onto the whole heart cookies.
  10. Assemble: Top with the heart cookies that have the center cut out. Dust with powdered sugar, if desired, and serve.
