Description

The most easy strawberry showstopper Easy Strawberry Earthquake Cake made by preheating oven to 350°F preparing strawberry cake mix per box pouring into greased baking dish beating 8 oz room temperature cream cheese with 1/2 cup powdered sugar and 1 tsp vanilla until smooth dropping spoonfuls over batter swirling gently with knife baking 30 to 35 minutes until toothpick clean meanwhile making fresh strawberry glaze by heating 1 cup mashed strawberries 1/3 cup sugar and 1 tbsp lemon juice until sugar dissolves adding cornstarch mixture until thickened cooling cake slightly drizzling glaze over top and garnishing with fresh strawberries and optional white chocolate drizzle. 1 box Strawberry Cake Mix plus oil eggs and water per box

8 oz Cream Cheese softened to room temperature

1/2 cup Powdered Sugar

1 tsp Pure Vanilla Extract

1 cup Fresh Strawberries mashed for glaze

1/3 cup Granulated Sugar

1 tbsp Fresh Lemon Juice

1 tsp Cornstarch mixed with 1 tbsp Water

Fresh Strawberries for garnish

White Chocolate for drizzle optional


Instructions

1. Preheat oven to 350°F 175°C. Prepare strawberry cake mix per box.

2. Pour batter into greased baking dish. Spread evenly.

3. Beat softened cream cheese, powdered sugar, and vanilla until smooth.

4. Drop generous spoonfuls of cream cheese mixture over batter.

5. Swirl gently with knife in S-curves or spirals. Do not overmix.

6. Bake 30 to 35 minutes until toothpick comes out clean.

7. While baking: combine mashed strawberries, sugar, and lemon juice in saucepan over medium heat. Stir until sugar dissolves.

8. Add cornstarch mixture. Stir until thickened to desired consistency. Remove from heat.

9. Cool cake slightly.

10. Drizzle fresh strawberry glaze over top.

11. Garnish with fresh whole strawberries and optional white chocolate drizzle.
