Description
Bright green St. Patrick’s Day cookies frosted with a sweet vanilla cream and topped with festive shamrock sprinkles. The perfect cookie for any party.

- 1 cup (2 sticks) unsalted butter, softened
- 1 ½ cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- Green food coloring (gel is best)
- For the Frosting:
- 4 cups powdered sugar
- ½ cup (1 stick) unsalted butter, softened
- ¼ cup milk
- 1 teaspoon vanilla extract
- Green food coloring (gel is best)
- Shamrock sprinkles or other St Patrick’s Day themed sprinkles
Instructions
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
- Add green food coloring to the dough, a few drops at a time, until you reach your desired shade of green.
- Roll out the dough on a lightly floured surface to about ¼ inch thickness. Use shamrock or other festive cookie cutters to cut out shapes.
- Place the cookies on the prepared baking sheets, leaving about an inch between each cookie.
- Bake for 8-10 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- While the cookies are cooling, prepare the frosting. In a large bowl, beat together the powdered sugar and softened butter until smooth.
- Gradually add the milk and vanilla extract, beating until the frosting is light and fluffy.
- Add green food coloring to the frosting, a few drops at a time, until you reach your desired shade of green.
- Once the cookies are completely cool, frost them with the green frosting and sprinkle with shamrock sprinkles.
- Let the frosting set before serving.
