Ingredients

- 1 lb shrimp, peeled and deveined
- 0.5 cup quinoa, rinsed
- 1 cup vegetable broth
- 1 cup broccoli florets
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon juice
Instructions
- Rinse the quinoa under cold water.
- In a medium pot, bring the vegetable broth to a boil. Add the quinoa, reduce heat, and let simmer for about 15 minutes, or until liquid is absorbed.
- In a large pan, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds.
- Add shrimp to the pan and cook until they turn pink, about 2-3 minutes on each side.
- If using fresh broccoli, add it to the pan with the shrimp. If using frozen, add it about 5 minutes before the shrimp are done. Cook until broccoli is bright green and tender.
- Once quinoa is ready, fluff it with a fork and add it to the pan with the shrimp and broccoli.
- Drizzle with lemon juice and mix everything gently.
Notes
For extra flavor, try adding your favorite spices or herbs. Can be stored in an airtight container for up to 2-3 days.
