Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream softened butter, brown sugar, and granulated sugar together until smooth.
  3. Add the egg, pumpkin spice, and vanilla extract. Mix until combined.
  4. In another bowl, whisk together flour, baking soda, and salt.
  5. Slowly add dry ingredients to the wet mixture, stirring until just combined.
  6. Scoop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
  7. Bake for 10-12 minutes, until edges are lightly golden.
  8. Cool cookies on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
