Description

A delightful treat that combines cozy pumpkin flavors with rich chocolate in an easy-to-make marbled loaf.


Ingredients

  • 1.75 cup all-purpose flour
  • 0.75 cup granulated sugar
  • 0.5 cup light brown sugar, packed
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp fine salt
  • 2 tsp pumpkin pie spice
  • 2 large eggs (room temperature)
  • 1 cup pumpkin puree (100% pumpkin, not pie filling)
  • 0.5 cup vegetable oil (or melted coconut oil)
  • 2 tsp vanilla extract
  • 0.25 cup milk (any milk works)
  • 0.33 cup unsweetened cocoa powder (natural or Dutch-process)
  • 0.5 cup semi-sweet chocolate chips (optional)
  • 1 tbsp milk (optional, to loosen chocolate batter if needed)
  • 0.25 tsp ground cinnamon (optional boost of spice)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper.
  2. In a large bowl, mix together the flour, granulated sugar, brown sugar, baking soda, baking powder, salt, and pumpkin pie spice.
  3. In another bowl, whisk together the eggs, pumpkin puree, vegetable oil, vanilla extract, and milk until well combined.
  4. Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Do not overmix.
  5. Take about 1 cup of the batter and place it in a separate bowl. Add the cocoa powder and mix until combined. If the chocolate batter is too thick, you can add a tablespoon of milk to loosen it.
  6. In the prepared loaf pan, alternate spoonfuls of the pumpkin batter and chocolate batter. Use a knife to swirl the two together to create a marbled effect.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let it cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Notes

Serve warm or at room temperature. Can be stored at room temperature for up to 3 days, in the refrigerator for up to a week, or frozen for up to 3 months.
