- 3 medium ripe bananas
- 2 cups rolled oats
- 1/3 cup honey or maple syrup
- 1/2 cup peanut butter (optional)
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup chopped nuts
- 1/2 cup dark chocolate chips
- 1/2 cup dried fruit (like raisins or cranberries)
Instructions
- Preheat your oven to 350°F (175°C).
- Line an 8×8 inch baking dish with parchment paper or lightly grease it.
- In a large bowl, mash the ripe bananas with a fork until smooth.
- Add the rolled oats, honey or maple syrup, peanut butter (if using), ground cinnamon, baking powder, vanilla extract, and salt to the mashed bananas. Mix until everything is well combined.
- Stir in the chopped nuts, dark chocolate chips, and dried fruit.
- Pour the mixture into the prepared baking dish and spread it evenly.
- Bake in the preheated oven for about 25-30 minutes or until the edges are golden brown.
- Remove from the oven and let cool for at least 10 minutes before slicing into bars.
Notes
Store in an airtight container at room temperature for up to 3 days. For longer storage, refrigerate for up to a week or freeze for up to 3 months.
