A modern twist on the classic Italian dessert, this Earl Grey Tiramisu features layers of ladyfingers soaked in Earl Grey syrup, topped with a creamy mascarpone mixture and dusted with cocoa powder.

- For the Earl Grey Syrup:
- 1 cup water
- 4 Earl Grey tea bags
- 1/2 cup granulated sugar
- For the Mascarpone Cream:
- 16 ounces mascarpone cheese, softened
- 1 1/4 cups heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- For the Assembly:
- 1 (12 ounce) package ladyfingers (savoiardi biscuits)
- 2 tablespoons unsweetened cocoa powder, for dusting
Instructions
- Make the Earl Grey Syrup: In a saucepan, bring water and sugar to a boil over medium heat. Stir until sugar is dissolved. Remove from heat and add Earl Grey tea bags. Steep for 5 minutes. Discard tea bags and let the syrup cool completely.
- Prepare the Mascarpone Cream: In a large bowl, beat the softened mascarpone cheese, heavy cream, powdered sugar, and vanilla extract until smooth and creamy. Be careful not to overbeat, as mascarpone can become grainy!
- Assemble the Tiramisu: Lightly dip each ladyfinger into the cooled Earl Grey syrup. Don’t soak them too long, or they’ll become soggy. Arrange the soaked ladyfingers in a single layer at the bottom of a 9×13 inch dish.
- Spread half of the mascarpone cream evenly over the ladyfingers. Repeat layers with the remaining ladyfingers and mascarpone cream. Remember to be gentle and even.
- Cover the tiramisu with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld together. Before serving, dust generously with cocoa powder.
