1 1/2 cups Graham Cracker Crumbs

1/4 cup Granulated Sugar for crust

1/2 cup Unsalted Butter melted

16 oz Cream Cheese softened to room temperature

1/2 cup Granulated Sugar for cheesecake

1 tsp Pure Vanilla Extract

2 large Eggs

2 1/2 cups Fresh or Canned Peaches diced drained if canned

1/4 cup Brown Sugar for peach layer

1 tsp Ground Cinnamon

1 tbsp Cornstarch

1/2 cup All-Purpose Flour for streusel

1/4 cup Brown Sugar for streusel

1/4 cup Unsalted Butter cold and cubed

1/4 tsp Ground Cinnamon for streusel


Instructions

1. Preheat oven to 325°F 160°C. Line 9×9-inch dish with parchment with overhang.

2. Combine graham crumbs, sugar, and melted butter. Press firmly into pan. Bake 10 minutes. Cool slightly.

3. Beat room temperature cream cheese until smooth. Add sugar and vanilla. Beat combined. Add eggs one at a time.

4. Pour cheesecake mixture over crust. Smooth.

5. Toss peaches with brown sugar, cinnamon, and cornstarch. Spoon evenly over cheesecake.

6. Mix streusel flour, brown sugar, and cinnamon. Cut in cold butter until coarse crumbs.

7. Sprinkle streusel over peaches.

8. Bake 45 to 50 minutes until center just set and streusel golden.

9. Cool completely at room temperature.

10. Refrigerate minimum 3 hours.

11. Lift out using parchment. Slice into 12 squares.
