Soft and fluffy muffins that combine cinnamon and apple, perfect for breakfast, snacks, or dessert.

- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 0.5 teaspoon baking soda
- 0.5 teaspoon kosher salt
- 2 teaspoons ground cinnamon (for batter)
- 0.25 teaspoon ground nutmeg
- 0.75 cup granulated sugar (for batter)
- 0.25 cup light brown sugar, packed
- 0.5 cup unsalted butter, melted and cooled
- 2 large eggs
- 2 teaspoons vanilla extract
- 0.75 cup whole milk, room temperature
- 0.5 cup sour cream (or plain Greek yogurt)
- 1.5 cups Granny Smith apple, peeled and finely diced (about 1 large apple)
- 0.25 cup granulated sugar (for cinnamon-sugar topping)
- 1 teaspoon ground cinnamon (for cinnamon-sugar topping)
- 1 tablespoon unsalted butter, melted (optional, for brushing warm tops)
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray.
- In a large bowl, whisk together the flour, baking powder, baking soda, kosher salt, 2 teaspoons cinnamon, and ground nutmeg.
- In another bowl, mix the granulated sugar and brown sugar with melted butter until well combined. Add the eggs one at a time, mixing after each addition. Stir in the vanilla extract, whole milk, and sour cream until smooth.
- Slowly add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to over-mix. Gently fold in the diced apples.
- In a small bowl, mix together the 0.25 cup granulated sugar and 1 teaspoon cinnamon for the topping.
- Fill each muffin cup about two-thirds full with the muffin batter. Sprinkle the cinnamon-sugar mixture generously on top of each muffin.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- If desired, brush the warm muffin tops with melted butter once they come out of the oven for extra flavor.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
For best results, use room temperature ingredients and do not overmix the batter.
