  • 0.5 cup unsalted butter (cold, cut into small cubes)
  • 0.75 cup buttermilk (cold)
  • 1 tsp vanilla extract (for the topping)
  • 2 tbsp heavy cream (for brushing, optional)
  • 1 tbsp coarse sugar (for sprinkling)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches, fresh raspberries, 0.5 cup of granulated sugar, cornstarch, lemon juice, vanilla extract, and fine sea salt. Stir gently to mix and set aside.
  3. In another bowl, whisk together the flour, 0.25 cup of sugar, baking powder, kosher salt, and ground cinnamon for the topping.
  4. Add the cold butter cubes to the flour mixture. Use a pastry cutter or your fingers to mix until it resembles coarse crumbs.
  5. Pour in the cold buttermilk and vanilla extract. Stir until just combined.
  6. Pour the fruit mixture into a greased baking dish. Drop spoonfuls of the topping over the fruit, covering it as much as possible.
  7. Brush the top with heavy cream and sprinkle coarse sugar if desired.
  8. Bake for about 40-45 minutes or until the topping is golden brown and the fruit is bubbling.
  9. Let it cool for a bit before serving.
